Blueberry Coffee Cake
1 cup self-rising flour
¾ cup sugar
1 cup fresh or frozen blueberries
2/3 cup buttermilk
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 large egg
2 tablespoons brown sugar
½ teaspoon ground cinnamon
Preheat oven to 350 degrees
Combine flour and sugar in a large bowl and mix. Gently stir in blueberries. Stir together buttermilk, butter, vanilla extract, and egg. Add buttermilk mixture to flour, sugar and blueberry mixture and stir till moist.
Pour batter into 8 inch square greased baking pan. Combine brown sugar and cinnamon and sprinkle over batter. Bake at 350 degrees for 35 minutes or until a wooden pick inserted in center comes out clean.
Tip: If you don’t have buttermilk, add 2 tsp. vinegar to cup of regular milk.
